EASY PUMPKIN HUMMUS
If you don’t know this about me yet, Halloween is my favorite day of the year!! For the month of October, I go all out! Costumes, decorations, entertaining …and I love to prepare Halloween themed foods for my family and friends. I have a few healthy recipes to balance out all the sweets. This pumpkin humus recipes is easy, tasty and always a crowd pleaser. Disclaimer: you must like the taste of pumpkin! Please try it and let me know what you think!

YIELDS
2 1/2 cups
INGREDIENTS
1 -2 small garlic gloves (or more if you like garlic)
5-ounce can chickpeas (drained)
15-ounce can pumpkin puree (or 1 3/4 cup pumpkin puree)-no sugar added!
1/2 teaspoon kosher salt
1 teaspoon ground cumin
Juice of 1 lemon
1 tablespoon olive oil/avocado oil
DIRECTIONS
Peel the garlic clove. Place it in the bowl of a food processor and process until finely chopped.
Drain and rinse the chickpeas. Add chickpeas, 1 3/4 cup pumpkin puree (or less, if you like a thicker hummus), 1/2 teaspoon kosher salt, 1 teaspoon cumin, the juice of 1 lemon and 1 tablespoon olive oil. (If desired, add a pinch of cayenne for some spice.) Blend thoroughly to combine.
Serve with fresh cut vegetables or put into Halloween ghosts made out of orange peppers (see pics below)
