Gazpacho Recipe

From my Spanish “Sister”

I lived in Spain during college. This gazpacho recipe is from my Spanish “sister” and dear friend Mari Carmen. It is her mother’s recipe from Cordoba, Spain that has been passed down and goes back many years. I translated it from Spanish and converted liters and kilos into pounds and cups. It is simple, healthy, refreshing and delicious. Enjoy!

Ingredients

1 Kilo of tomatoes (or about 2.2 pounds) -on average 8 or 9 tomatoes

2 Cucumbers

1/2 Green pepper

1 Bulb garlic crushed

2 Liters of water (4.22 US cups in a liter).

1/2 Cup of good olive oil

7 Tablespoons of vinegar

1 Tablespoon of salt

Directions

Peel tomatoes and cucumbers. Blend all the ingredients. I use a Vitamix but any blender will work. Refrigerate. This gazpacho is best when it is cold and consumed as a drink. If you want it as a dish you should add less water to make it thick. You can accompany it with diced tomato and cucumber.
