Summer is just "peachy"

Summer is for barbecues, ice cream and PEACHES!!

At the Brighton Farmer’s Market last week, I loaded up on fresh-picked peaches from Noto Fruit Farm and Cider Mill.

I was so happy to see Rhonda Noto, my friend and clean eating jumpstarter, and support her family business.

It wasn’t until I got home and thought.-what do I do with SO many peaches??

I typically eat peaches on their own as a snack. I decided to get creative and came up with some easy and healthy new ways to add peaches into my meals.

I discovered peaches are a tasty fruit to add into smoothies and salads and to gently mash to add flavor to your water.

But hands down, my favorite new way to enjoy peaches is grilled on the barbecue.

They are so easy and delicious to make. The recipe is below. Try it. You won’t regret it.

Plus, peaches are healthy. They are packed with antioxidants and nutrients including fiber and lots of vitamin C. They made in digestion, prevent heart disease and improve moisture in our skin.

What is your favorite peach recipe. Please share!!

GRILLED PEACHES

  • Cut peaches

  • Heat grill to medium high

  • Grill cut side down until soft (about 4 minutes)

  • Flip and grill skin side down for about 4 minutes until almost falling apart

That’s it! So easy, sweet and satisfying and HEALTHY TOO!

Many recipes suggest to pair grilled peaches with ice cream, creme, honey or powdered sugar. However, it becomes even sweeter once grilled so you don’t need it.

Enjoy!
