Guacamole Summer Salad


This super easy, healthy and yummy salad is perfect for BBQs, picnics and hot summer meals. It’s also loaded with nutrients and will provide you with lots of energy. You can double the recipe for larger crowds.

Ingredients

(you can substitute black beans with garbanzo beans and omit or add any veggies (corn).

1 pint grape tomatoes, cut in half

1 yellow, red or orange bell pepper, seeded and diced

1 cucumber diced (I prefer peeled)

1 (15-ounce) can black beans, rinsed and drained

1/2 cup small diced red onion

2 tablespoons minced jalapeno peppers, seeded (2 peppers)-optional

1/2 teaspoon freshly grated lime zest

1/4 cup freshly squeezed lime juice (2 limes)

1/2 teaspoon minced garlic (or more if you prefer)

1/4 cup good olive oil or avocado oil

1 teaspoon kosher salt (or any coarse salt)

1/2 teaspoon freshly ground black pepper

2 ripe avocados, diced

Combine and stir all ingredients except for the avocados. Chill and add avocado right before you serve. Will last a few days. It stores well in a glass container with lid. Enjoy!
