Cauliflower Buffalo Bites (Healthy Version)
Move over Cauliflower Pizza and make some room for Cauliflower Buffalo Bites.
Cauliflower Buffalo Bites are super easy to make, taste great and are less expensive compared to chicken wings ($2.00 each). This recipe is great for an appetizer or a veggie side dish.
Cauliflower packed with nutrients, vitamins and minerals and has many other health benefits:
Loaded with fiber and aids in digestion
Provides antioxidants, which help to reduce inflammation and fight disease
It’s low in calories and high in water and fiber which can help aid in weight loss.
Cauliflower is very versatile and can replace grains and legumes in many recipes. If you are wanting to eat more veggies or follow a low-carb diet, you can try other cauliflower based products such as rice, pasta, pizza dough or tortilla.
CAULIFLOWER BUFFALO BITES
Ingredients
1 1/3 cup Almonds or 1 cup almond flour (I use Bob’s Red Mill Almond Flour)
1 tsp Garlic powder (optional)
1/2 tsp Sea Salt
1 large Egg
1 head Cauliflower (cut into florets)
1/2 cup Buffalo Spicy Sauce (I use Frank's because no added-sugar)
1/4 cup Butter (or you can use ghee or olive oil)
Instructions
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Combine the almonds, garlic powder (optional), and sea salt in a food processor. Pulse until the consistency is finely ground. If using almond flour instead of almonds, skip this step and just place the same ingredients into the bag in the next step.
Place the almond mixture into a clean plastic storage bag that will be large enough to hold the cauliflower, or a large bowl with a lid. Set aside.
Whisk the egg in a large bowl. Add the cauliflower and stir to coat. Make sure all florets are coated. To make it easier, you can use a bowl with a lid and shake it.
Immediately add the cauliflower to the bag or bowl that has the almond mixture. Seal or fold over the bag (or cover the bowl), and shake to coat the cauliflower.
Arrange the cauliflower in a single layer on the baking sheet. Roast in the oven for 25-30 minutes, until browned and tender.
Meanwhile, heat together the butter (or ghee) and buffalo sauce. You can do this in the microwave or on the stove over medium-low heat. (I do this in the microwave to save time). Whisk to combine.
When the cauliflower is done, transfer it to a serving bowl. Evenly pour the buttery sauce mixture over it, and gently toss to coat. Serve with blue cheese and fresh cut celery and carrots.
