Consistency is Key!

We had our first big snow fall last week and my husband and boys packed up their ski gear, bundled up and excitedly headed to the mountain…without me. I have so many wonderful memories of my family’s ski adventures over the years. It’s been 2.5 years since my accident (learn more). I’m pleased with how much progress I’ve made, but I still can’t ski (and probably won’t be able to again)….I know first hand how effective adding a few small things into your life and doing them consistently can be to help you stay on track and reach your health goals. That’s why I decided to create a brand new program so I can show you how easy and effective it can be for you too. Farmer's Market: Clean Eating Made Easy And Fun! Plus, My favorite Spots!

Eating Clean can help you loose weight, increase energy, avoid medication, prevent disease and boost overall health. You will love my Pumpkin Chocolate Chip Balls. They are an easy to make treat without the guilt. The recipe makes about 24-32 balls (depending on size). I made these on the bigger side. The only problem is, they are so delicious it’s hard to limit to just 2 (the actual serving size).. I just made a big batch of these to keep in the freezer for the week! I have a feeling they won’t last very long.

SPOOK-TACULAR CHICKEN AND RICE STUFFED PEPPERS

These stuffed peppers are so much fun and great for all ages. I am sharing a simple chicken, rice and beans recipe, but there are so many other ways to stuff them. Most recently, I used leftover pumpkin chili. A fun twist could even be spaghetti, steak and peppers or macaroni and cheese. These peppers are filled with brown rice, but you can substitute quinoa or any other healthy whole grain. Feel free to modify spices based on your taste. And don’t get fooled by the number of steps. It’s really simple…especially if you use a rotisserie chicken and packaged rice.

Susan's Coconut Cookies (with healthier ingredients)

If you’ve ever worked, been to a social event or celebrated a holiday with me, there’s a good chance you’ve tasted my “famous” coconut cookies. Not only are they my absolute favorite treat, they are super easy to make and always a crowd pleaser. It’s hard to eat just one! In fact, a co-worker compared my coconut cookies to crack because they are so yummy and addictive. That’s because they are loaded with sugar, condensed milk and chocolate. What's now to like?!

And it is proven that nightly meals together create closer, healthier, happier, less stressed families and promote smarter and well behaved kids.
